3 for 3

Appetizer:  Shrimp and Sauce 

Dinner: Lemon Chicken Pasta with Steamed Asparagus

Drink:  Red Wine and Ice Tea

*Note:  It was very good. I really enjoyed it.  Out of the 3 meals I think that was my favorite. Mark said that the Asparagus was one of the best he has ever had. His favorite is over the grill with soy sauce, but said the flavor I used was excellent.  I soaked them in garlic butter and season salt before steaming them.  I have to admit I don't normally like asparagus with out some fancy cream sauce on them, but I as well liked the ones I made last night.  

No pictures this time!!!  I won't keep boring everyone with the "family dinners".  I am really enjoying having my family together at the table.  We love to talk about our HIGHS and LOWS of the day.

PS:  While in the middle of cooking last night, I realized I forgot one of the most important items, 'garlic butter'.  So I asked Mark to pick it up on his way home from work.  While I was stressing out over my dinner being stalled, Morgan wasn't being much of a treat either.  It seems she likes to give me a hard time just when I start to cook and need my "focus cap on".  

I am on the verge of a melt down because my dinner is going to be ruined soon if Mark doesn't hurry up.  It seemed like it was taking forever. When all of the sudden he walks in and hands me these beautiful flowers and a card.  How could I be mad after that? 




The card said:

Forgotten Post:

We took Morgan to the pool the weekend before this last weekend, and again this weekend.  We got her a little float and she absolutely loved the water.  She stayed both weekends in the water for almost an hour and then both times as well, feel asleep for half an hour.  After a little snoozer we went home.  The first weekend it was just mommy and daddy, this weekend Val and Payton joined us.  Hunter would have been there but he had a hockey game way up North, but never fear-o (a quote from Higgley Town Hero's a child show if you didn't know), I got a picture of him and Morgan when he got home Saturday.  He still had his travel hockey warm-up suit on.

2 for 2

Okay girls, so last night I made dinner for the family, as well as Val and her daughter.  Val got a new job after a long search after she moved here from Wisconsin a month ago.  

Last night I made Stuff Chicken with Bearnaise Sauce, topped with a little Parsley.  First I started out with a Spring Salad, that included fresh romaine lettuce, strawberries, tomatoes, black olives, seasoned salt and vinaigrette italian dressing, tossed lightly!!  (winking) My fancy cooking talk!!! I may have to start my own cooking show soon.... "Misty's 30-Minutes Kitchen".  That is because I like the meals you can cook in 30-minutes!!!  LOL

I set the table because I am all about the "presentation".  So again the candles were lit, plates set up, wine on table and a pitcher of fresh cut lemmon ice water.  

With the Stuff Chicken, the stuffing including fresh chopped apples, chicken stuffing mix with an egg and seasoned salt.  Who knew that "seasoned salt" could do so much to so many different meals??? Then I steamed up some Californian Mix Veggies.  

This time I actually ate my own cooking, and I can say for myself, that it turned out great.  The chicken was nice and tender (juicy, not dry). I had made some mac-n-cheese for the kids, so I enjoyed some of that myself as my side dish, since I do not eat veggies. 

So take a look.

By the way, little Ms. Morgan Paige, sat in her high chair for the first time. So she could feel part of the gang at the dinner table. And she did really well playing with her toys while the adults got to eat dinner.
